Brewing Coffee for a Crowd: Percolators, Urns and Large Batches

A 12 cup drip machine covers a household. It does not cover a church hall, a family reunion, a school fundraiser or a campsite with eight people in it. Somewhere above about twenty cups the format itself stops making sense, because you are no longer brewing one batch, you are running the machine repeatedly while a queue forms and the first pot goes cold.

The equipment built for that job works differently from a drip brewer, and understanding how it works explains both why it scales so well and why the coffee tastes the way it does. Percolators and urns have a distinctive character, and the people who love them and the people who avoid them are usually describing the same property from opposite sides.

Where a Drip Machine Runs Out

Two limits bite at once. The first is capacity: a 14 cup carafe is roughly 70 ounces, which serves about six people one large mug each with nothing left over. The second is holding. Once brewed, drip coffee needs somewhere to sit, and neither a hot plate nor a thermal carafe keeps a hundred servings ready over a two hour event.

The third limit is human. Running four consecutive batches through a drip machine takes the better part of forty minutes, and somebody has to stand there doing it. Large batch equipment brews once and then serves itself through a spigot, which is at least as important as the volume.

How a Percolator Actually Brews

A percolator is not a drip machine with a bigger pot. Water in the base is heated until it rises up a central tube, spills over a perforated basket of grounds near the top, drains back into the base, and then cycles through again. The same liquid passes over the grounds repeatedly, getting stronger and hotter with each pass, until a thermostat decides the cycle is finished.

That recirculation is the whole story. It produces coffee that is hot, strong and unmistakably robust, and it is also why percolator coffee is easy to over extract into bitterness. Modern electric percolators manage this with a thermostat that ends the perk cycle and switches to a keep warm mode, and most add a light so you are not guessing. Electric Versus Stovetop

Electric percolators control the cycle for you. Stovetop models do not, which makes them the more demanding option and the more portable one. On a stovetop or a camp stove you judge the perk by the sound and by the color visible in the glass knob on the lid, and you take it off the heat yourself. Coffee Urns Are Percolators at Scale

The features that matter at this size are unglamorous. A level window tells you how much is left without opening anything. A ready light tells servers when to start. Sizing an Urn

Plan on more than one serving per person for an event lasting over an hour. Grind and Dose Are Different Here

Percolation demands a coarse grind. The basket perforations are much larger than a paper filter’s pores, and fine grounds simply pass through into the pot, producing sludge in the last cups. Coarse also slows extraction, which is a useful counterweight to the recirculation.

Dose runs lighter than drip for the same reason. Because the water passes the grounds repeatedly, roughly one tablespoon per cup is a common starting point rather than the two tablespoons that drip brewing wants. Many urns include a large paper basket liner, which makes cleanup enormously easier and traps fines at the same time.

What You Give Up

Nobody chooses a percolator for delicate flavor. The repeated boiling drives off aromatics and pushes the cup toward a heavy, roasty profile, and light roasts with fruit or floral character are largely wasted in one. Medium and darker roasts suit the format far better, because their flavors survive the treatment.

Holding is the other tradeoff. Coffee sitting in a heated urn for two hours keeps developing, and the last cups are never as good as the first. Brewing two smaller batches an hour apart gives better coffee than one enormous batch held all afternoon, if you have the equipment and the attention to do it.

Choosing

Under about 20 cups, a large drip machine with a thermal carafe is still the better drink. From 20 to 50 cups, a coffee urn is the practical answer and the serving spigot alone justifies it. Above 50, plan two urns or a single large commercial unit, and build in the brew time.

For camping, a stovetop percolator is hard to beat on durability and independence from power.
