Pour Over Cone Shapes and Technique Explained

Pour over is the method where the brewer does the least and the person does the most. There is no pump, no timer and no automation. Water goes in at the top, coffee comes out at the bottom, and everything in between is decided by grind size, the shape of the cone and how you pour.

That makes cone geometry genuinely important rather than a styling choice. A conical dripper, a flat bottom basket and a Chemex will produce noticeably different cups from the same beans, because they change how deep the coffee bed sits and how fast water leaves.

What the Cone Is Doing

In any pour over, water passes through the coffee bed under gravity alone. Flow rate is set by grind size, by the depth of the bed, and by how much open filter area the water can drain through. The cone shape decides the second and third of those.

A steep cone concentrates the grounds into a deep central column, so water travels through more coffee for longer. A flat bottom spreads the same dose into a shallow, wide layer, so contact time is shorter but more even across the bed. Neither is better in the abstract; they suit different grind settings and different tastes.

Conical Drippers

The classic conical dripper has steep walls, spiral ribs and a single large hole at the tip. The large opening means the dripper itself barely restricts flow, so grind size and pour rate do nearly all the work. That is why conical drippers are the flexible option and also the least forgiving: a small change in grind changes the brew a lot.

The deep bed favours a medium to medium fine grind and rewards a controlled, slow pour. If you enjoy adjusting variables, this is the shape that responds most. Options in the pour over category cover both glass and stainless versions of this shape.

Flat Bottom Baskets

Flat bottom brewers use a wedge or basket shaped filter and typically several small drain holes. The shallow bed extracts more evenly because water reaches every part of the coffee at a similar time, and the restricted drainage makes the brewer less sensitive to grind error.

This is the shape to choose if you want consistency without technique. It is also closer to what a drip machine does, so the cup tends to taste familiar rather than dramatic. The Chemex Is Its Own Category

A Chemex is a conical brewer, but its filters are the distinguishing feature. They are substantially thicker than standard cone filters, which slows drainage considerably and traps far more oils and fines. The result is an unusually clean, tea like cup with very little body.

That thickness has practical consequences. Grind coarser than you would for a standard conical dripper, or the brew will stall and take twice as long. The Chemex 8 cup model also serves as a carafe, so the brewer and the vessel are one piece of glass, which is elegant and also fragile. Chemex filters are proprietary and cost more than standard cone papers, which is a running cost worth factoring in.

Paper Against Metal Filters

Paper absorbs oils and blocks nearly all fine particles, producing a clean, bright cup with no sediment. It is a consumable, and thicker papers slow flow more than thin ones.

Metal mesh filters let oils and some fines through, so the cup has more body and a slight sediment layer, closer to a French press than to filter coffee. They never need replacing. Brewers such as the Bodum pour over with a permanent stainless steel filter take that approach, which suits people who dislike buying papers and do not mind the extra texture.

If you use paper, rinsing the filter with hot water before adding coffee removes papery taste and warms the brewer at the same time. It takes ten seconds and makes a noticeable difference.

Grind and Ratio

Start at a medium grind, roughly the texture of table salt, and a ratio of 1 gram of coffee to 16 grams of water. For a single mug that is around 20g of coffee to 320g of water.

Total brew time is your feedback. For a single cup conical dripper, aim for somewhere between two and three minutes from first pour to last drip. Much faster means grind finer; much slower means grind coarser. Adjust grind before you change anything else.

The Kettle and the Pour

A gooseneck spout gives a thin, controllable stream that lands where you aim it. A standard kettle spout dumps water fast and unevenly, which digs holes in the bed and creates channels. If you are brewing with a conical dripper, the kettle matters. If you are using a flat bottom brewer with a metering lid, it matters far less.

Water temperature around 93 to 96 degrees Celsius suits most roasts. A variable temperature electric kettle removes the guesswork, though boiling and waiting thirty seconds is close enough for most purposes. The bloom

Pour roughly twice the coffee weight in water first, just enough to wet all the grounds, and wait thirty to forty five seconds. Fresh coffee releases carbon dioxide during this stage and visibly swells. That gas would otherwise push water away from the grounds and cause uneven extraction. Older coffee blooms weakly or not at all, which is a useful freshness indicator in itself.

Pouring Pattern

After the bloom, pour in slow concentric circles from the centre outward, stopping short of the filter wall. Water poured directly onto the paper runs down the side without passing through coffee, which weakens the brew.

Keep the water level in the cone reasonably steady rather than filling it to the brim and letting it drain empty between pours. A stable level keeps the bed submerged evenly. Finish with a gentle swirl of the whole brewer so the grounds settle flat rather than clinging to the walls.

Choosing a Shape

Take a conical dripper if you want control and are willing to adjust. Take a flat bottom if you want a repeatable cup with minimal technique. Take a Chemex if you want clarity above body and do not mind proprietary filters and careful handling. All three make good coffee; they simply ask for different amounts of attention.
