Grinding is the variable that decides whether an espresso machine performs at its ceiling or well below it. The same machine, the same beans and the same water will give you a thin, fast shot or a slow, syrupy one depending entirely on grind. That is why so many espresso machines now build a grinder into the chassis, and why buyers of the ones that do not end up shopping for a grinder within weeks.

Burr Grinding Against Blade Chopping
A blade grinder spins a propeller and smashes beans into fragments of wildly different sizes. A burr grinder passes beans between two abrasive surfaces set a fixed distance apart, so particles exit only when they are small enough to fit through the gap. The result is a far narrower particle size distribution.
For espresso this is not a refinement, it is a requirement. Extraction happens at the surface of each particle. If your grounds contain both dust and boulders, the dust over extracts and turns bitter while the boulders under extract and stay sour, in the same cup, at the same time. Espresso lives in a narrow band. Moving one step should change shot time by a few seconds, not by twenty. A grinder with 40 settings spread from Turkish fine to French press coarse may only offer four or five usable espresso positions, and you will find yourself wanting a setting between two of them.
