What Bar Pressure Figures Mean on Espresso Machine Listings

Bar pressure is the number that sells espresso machines. It appears in titles, on boxes and in the first bullet of most listings, usually as 15 bar or 20 bar, occasionally as 3.5 bar, and among enthusiasts as 9 bar. Those numbers are not comparable, and treating a higher figure as a better machine is the most common misreading in this whole category.

This article separates what the different pressure figures actually describe, why the number in a listing is usually a pump rating rather than a brewing measurement, and what you can reasonably infer from it when comparing two machines.

Where the 9 Bar Figure Comes From

Nine bar is the conventional target pressure for brewing espresso at the coffee puck. It is a convention rather than a law of physics, inherited from lever and pump machine design, and plenty of good coffee is brewed above and below it. The important point is that 9 bar describes pressure at the basket during extraction, over a period of roughly twenty to thirty seconds.

That figure is a working pressure, not a peak. It is what the water sustains while it is forcing its way through compacted grounds. If pressure at the puck runs far higher, water tends to carve channels through the bed instead of soaking it evenly, which produces a shot that tastes both sour and bitter at once.

What a 15 Bar or 20 Bar Rating Describes

When a listing says 15 bar or 20 bar, it is almost always quoting the maximum pressure the vibratory pump can generate with the outlet blocked. That is a component specification, measured with no coffee in the path. It tells you the ceiling of the pump, not the pressure the coffee experiences.

Nearly every domestic pump espresso machine, from entry level upward, uses a pump rated somewhere between 15 and 20 bar. The difference between them is what happens downstream of the pump: whether an over pressure valve bleeds the excess back to the tank, how the boiler stabilises temperature, and what basket the water meets.

The over pressure valve

Most machines fit an over pressure valve, often abbreviated OPV, which dumps flow back to the reservoir once line pressure exceeds a set point. That set point, not the pump rating, is what determines brew pressure. Many machines ship with the OPV set somewhere between 9 and 12 bar. A 20 bar pump behind a 10 bar valve brews at 10 bar, so the 20 in the title never reaches the coffee.

Pressurized Baskets Change the Meaning Again

Entry level machines usually ship with a pressurized, or dual wall, basket. It has a restrictor hole behind the visible filter plate that holds back flow artificially, generating back pressure regardless of grind size. That is why an inexpensive machine can produce crema with supermarket pre-ground coffee.

The pressure in that case is created by the basket, not by resistance from the coffee bed, so grind adjustment has much less effect. A machine such as the De’Longhi Stilosa is forgiving for exactly this reason, and it also means the bar figure in its listing says nothing useful about extraction quality. If you later fit a single wall basket, grind size suddenly becomes the dominant variable.

Steam Espresso Makers and the 3.5 Bar Number

A small group of machines quote much lower figures, typically 3.5 to 5 bar. These are steam driven rather than pump driven. Water is heated in a sealed vessel until steam pressure pushes it through the grounds. The SOWTECH steam espresso maker is one example of the format.

These are pressure vessels, and they should be operated only with the lid and cap secured as the manual specifies, never opened while hot, and never filled above the marked line. Burn and pressure risk is real with any steam driven brewer, and the manufacturer manual is the authority on filling, venting and cooling.

The output from a steam brewer is closer to strong moka pot coffee than to pump espresso. That is a legitimate drink with its own following, but it will not behave like a 9 bar shot, and no pressure figure on the box changes that.

Gauges, Pre-Infusion and What They Add

Some machines fit a pressure gauge on the front. A gauge is a diagnostic tool, not a quality feature by itself. It tells you whether your grind is producing enough resistance, which is genuinely useful when dialling in a new bag, but only on machines with a single wall basket where grind actually drives pressure. On a pressurized basket the needle will sit in the same place regardless.

Pre-infusion is the other pressure related feature worth understanding. It applies low pressure water to the puck for a few seconds before the pump ramps to full pressure, which wets the bed evenly and reduces channelling. What the Listing Cannot Tell You

A bar figure in a product listing cannot tell you the OPV setting, whether the machine ships with pressurized or single wall baskets, how stable temperature is across a shot, or how quickly pressure ramps at the start. Those are the variables that separate machines, and they are almost never printed.

Listings in this niche also carry outright contradictions. It is common to see a bar figure in the title that disagrees with the specification table lower down, or a steam machine described with a pump machine number. Where the two disagree, treat the specification as unconfirmed rather than assuming the higher figure is the real one.

How to Read a Pressure Claim

Use bar pressure as a category signal, not a ranking. A figure of 15 or 20 bar tells you the machine has a vibratory pump, which puts it in the mainstream pump espresso group. A figure of 3.5 to 5 bar tells you it is steam driven and will behave differently. A stated 9 bar brew pressure, if the seller distinguishes it from pump rating, suggests someone in the product team knows the difference.

Beyond that, compare the things that vary: basket type, boiler or thermoblock arrangement, temperature control, steam power and build. Those are visible in the wider espresso machine listings and they matter far more to the cup than the largest number on the box.
