Brewed coffee is about 98 percent water, and the small fraction that is not water has to be pulled out of the grounds by it. Hardness, Softness and Flavor

Hard water carries dissolved minerals, mainly calcium and magnesium. Those are not simply contaminants. Magnesium in particular helps water grab hold of flavor compounds, and coffee brewed with mineral free water tastes hollow. The generally cited target for brewing water sits in a moderate band, neither the very soft supply some regions have nor the heavily mineralized supply others live with.

Very hard water flattens acidity and mutes aromatics, so coffee tastes dull whatever beans go in. Very soft water does the opposite, exaggerating sourness and leaving the body thin. Chlorinated tap water is a separate issue again. Scale Is the Machine Problem

Heat drives dissolved calcium out of solution, and it deposits on the hottest surfaces inside the brewer. The deposit is limescale, and in a hard water area it starts accumulating from the first brew.

The symptoms arrive slowly, which is why they get blamed on the machine rather than the water. Brew times stretch out as the tube narrows. The machine gets louder, gurgling and sputtering where it used to run quietly. Brew temperature falls, because scale insulates the element from the water, which produces weak coffee that no amount of extra grounds corrects. Eventually flow stops altogether.
