Description

The Breville Barista Touch BES880BSS is an all in one espresso machine with a conical burr grinder built into the top, PID temperature control, a ThermoJet heating system and an automatic steam wand, operated through a colour touchscreen. Breville organises the interface around three steps, grind, brew and milk, and lets you save eight named drinks alongside five preset cafe favourites.

This is the most completely documented product covered on this site. The listing publishes a wattage of 1680 watts, a voltage range, a 67 ounce water tank, a half pound bean hopper, a 54mm portafilter diameter and a two year limited warranty, and it lists every accessory in the box. That is unusual enough to be worth stating outright before anything else, because almost every other record in the espresso machine category leaves most of those blank.

The Grinder and Dose Control

The integrated grinder is a conical burr, not a blade mill, and Breville describes it as delivering the right amount of coffee on demand with a single touch. Burr grinders crush beans to a consistent particle size where blade mills chop them into a mixture of dust and chunks, and on espresso that difference is not a refinement, it is the whole game: an inconsistent grind channels under pressure and no other setting can compensate.

Dose control means the machine grinds by time into the portafilter rather than into a hopper you scoop from. The listing lists a Razor precision dose trimming tool among the accessories, which is a small blade that levels the puck to a repeatable height after grinding, and its inclusion tells you the dosing is close but not exact. Grind control is described as adjustable without stating how many settings there are, which on an espresso grinder is the number people ask first.

Temperature, PID and ThermoJet

Two separate temperature claims are made and they do different things. The ThermoJet heating system reaches extraction temperature in 3 seconds, which is a heating speed rather than a stability figure and is the reason Breville can claim beans to espresso in under a minute. Digital PID temperature control then holds the water at the target during extraction.

PID is the specification that matters. A simple thermostat swings several degrees either side of its set point as it cycles, and espresso is sensitive enough that the same dose extracted at the top and bottom of that swing tastes different. PID control damps the swing to a fraction of a degree. What Breville does not publish here is the target temperature itself or the range over which it can be adjusted, and the touchscreen is described as allowing temperature adjustment without saying to what.

Pre Infusion and Extraction

The machine uses low pressure pre infusion, gradually increasing pressure at the start of the shot. A dry puck hit immediately at full pressure channels, letting water carve a path through one part of the bed while the rest barely extracts, and a gentle initial soak lets the grounds swell and settle first.

Breville frames all of this under what it calls the four keys formula, covering dose, grind, water and milk. That is a marketing structure rather than a specification, but the underlying claim is defensible: this machine gives you control over each of those variables and most machines in this category give you control over none. The portafilter is 54mm, full stainless steel, and both single wall and double wall baskets are supplied. Single wall baskets are the ones that require a correct grind and reward it; double wall baskets are pressurised and produce crema regardless, which is the right starting point for a beginner.

The Automatic Steam Wand

The steam wand textures milk automatically to a temperature and texture you set on the screen, rather than requiring you to judge it by ear and by hand. Breville describes it as delivering barista quality microfoam suitable for latte art.

Automatic texturing is the feature that divides opinion in this category. It removes the steepest part of the learning curve and it produces consistent milk without practice. It also removes the control that someone who has learned to steam by hand will want back, and it adds a temperature probe and a motorised valve to the list of things that can eventually fail. The 480ml stainless jug supplied is the right size for the machine, and the milk temperature and texture are both programmable and saved with each of the eight custom drinks.

Capacity, Water and What Is in the Box

The water tank holds 67 ounces and the bean hopper holds half a pound. Both are generous for a domestic machine and the tank size in particular means a morning of drinks without refilling. A ClaroSwiss water filter is included, which treats the water going into the boiler, and a water hardness test strip is supplied so the filter and descaling schedule can be set to your supply. Including the test strip is a detail almost nothing else in this category bothers with.

The rest of the box contains the 54mm portafilter, single and double wall baskets, the jug, the Razor dose trimming tool and a cleaning kit. The 54mm size is worth noting before buying: the commercial standard is 58mm, so third party baskets, tampers and bottomless portafilters are less widely available for Breville’s size than for a standard machine, though the aftermarket for 54mm is now substantial.

Power, Size and the Few Gaps

The machine draws 1680 watts at 110 to 120 volts, which is a real domestic circuit load and worth checking against a kitchen already running a kettle and a toaster on the same ring. The dimensions are 12.7 inches deep by 15.5 inches wide by 16 inches high, and the 16 inch height means the bean hopper lid will not clear a standard wall cabinet.

The gaps in this record are few and specific. No brew temperature is stated in degrees despite PID control being a headline feature. No pump pressure figure is given, which is a notable omission on an espresso machine, though Breville’s silence on it is arguably more honest than the inflated bar ratings competitors advertise. No heat up time is given beyond the 3 second ThermoJet claim, and no grind setting count is given. The Included Components attribute lists a 16 ounce jug while the bullets say 480ml, which is the same volume expressed two ways rather than a contradiction.

Who It Suits

This suits someone who wants cafe style milk drinks at home, is prepared to learn dose and grind but not milk steaming, and wants the machine to remember what each person in the household drinks. The combination of a burr grinder, PID control and automatic texturing removes most of the ways a beginner fails while leaving the variables that reward attention. The Breville Barista Touch Impress BES881 adds automatic tamping to the same idea.

Look elsewhere if you want to steam milk by hand, in which case the Breville Barista Express offers the same grinder and a manual wand for considerably less. The Barista Pro sits between the two with a manual wand and the ThermoJet system, and the super automatic category is where to look if you would rather press one button and not learn anything at all. The Breville Oracle BES980XL is the dual boiler machine above it.
