A French press is the least fussy brewer in most kitchens and the one that suffers most from casual use. There is no pump, no paper filter, no timer and nothing to dial in beyond three variables: grind size, ratio and time. Get those three roughly right and the press produces a full bodied cup with more texture than any paper filtered method. Get them wrong and you get bitter, silty coffee, which is why so many presses end up in a cupboard.
This article sets out what immersion brewing actually does, sensible starting numbers, and the handling steps that control sediment.
Immersion Brewing Against Percolation
Most brewers pass water through a bed of coffee once, in a continuous flow. A French press instead submerges the grounds in water for a set period, then separates them with a mesh plunger. Every particle sits in the same water for the same time.
Two consequences follow. First, contact time is the dominant variable rather than flow rate, so grind and time have to be balanced against each other rather than adjusted independently. Second, a metal mesh lets oils and fine particles through, which is why press coffee has more body and a heavier mouthfeel than a paper filtered brew, and also why it leaves sediment at the bottom of the cup.
Grind Size Is the Main Control
Coarse. Roughly the texture of sea salt or coarse breadcrumbs. This is the single most important thing about French press brewing and the most commonly ignored.
Fine grounds do two things in an immersion brew. They over extract quickly, because their surface area is enormous and they sit in hot water for minutes rather than seconds, producing harshness. They also slip through the mesh, so the cup carries a mud layer that keeps extracting while you drink it.
Pre-ground supermarket coffee is usually milled for drip machines and is too fine for a press. A burr grinder set coarse, such as the Cuisinart DBM-8P1, gives a far more even particle size than a blade grinder, which matters more here than in almost any other method because the fines have nowhere to go.
Ratio and Dose
A workable starting ratio is 1 gram of coffee to 15 grams of water for a strong cup, or 1 to 17 for something lighter. In practical terms a 34oz press, which holds roughly 1 litre, takes around 60 to 65 grams of coffee filled to the top.
Presses are sold by total volume, and that volume is measured to the brim before the plunger goes in. A press described as 34oz will not deliver 34oz of coffee, because the plunger displaces liquid and you should leave headroom. Treat the stated capacity as a maximum rather than a serving size, which is worth remembering when comparing a Bodum Chambord in the 34oz size against a smaller press.
Water Temperature and Steep Time
Water just off the boil, around 93 to 96 degrees Celsius, suits most roasts. If you do not have a temperature controlled kettle, boiling and then waiting about thirty seconds gets you close enough.
Four minutes is the standard steep. It is a starting point, not a rule. Longer steeps extract more and taste heavier; shorter steeps taste brighter and thinner. If your coffee is bitter at four minutes, grind coarser before you shorten the time, because a coarser grind fixes the cause while a shorter steep only masks it.
The crust and the stir
About a minute in, the grounds form a floating crust with trapped gas underneath. Breaking that crust with a spoon and gently stirring lets the grounds sink and keeps extraction even. Some people skim the foam off at this point to reduce bitterness. Both steps are optional and both are easy to overdo, since aggressive stirring creates fines.
Plunging and Decanting
Press the plunger slowly and steadily. Forcing it drives water through the bed at speed, stirs up fines and pushes grounds around the edges of the mesh. If the plunger meets heavy resistance, the grind is too fine.
Stop pressing when the mesh reaches the top of the coffee bed rather than crushing it into the base. Then pour the coffee out immediately. Coffee left sitting on the grounds continues to extract, and a press left on the table for twenty minutes will taste noticeably worse than the first cup poured from it. Decanting into a separate carafe or a thermos is the simplest fix for anyone who drinks slowly.
Glass, Stainless and Heat Retention
Borosilicate glass presses are the classic format. They are inexpensive, let you see the brew, and lose heat quickly, which is a real issue over a four minute steep in a cold kitchen. They also break, and replacement beakers are sold separately for most models. The Bodum Brazil is a straightforward example of the glass and plastic frame design.
Double walled stainless presses, such as the Secura stainless steel press, hold temperature far better through the steep and survive being knocked over. The trade off is that you cannot see the brew, and vacuum insulation keeps the coffee hot on the grounds after plunging, which makes decanting more important rather than less.

Controlling Sediment
Some sediment is intrinsic to the method. If you want less of it, coarsen the grind, stir less, plunge slower, and stop pouring before the last centimetre in the beaker. Multi layer mesh filters catch more than single layer ones, and a well seated filter disc that touches the beaker wall all the way round makes a visible difference.
What does not work is grinding finer to get more strength. Strength comes from ratio. Grinding finer to compensate for a weak cup is the most common mistake in press brewing and it produces bitterness rather than body.
Cleaning
Rinse the plunger assembly after every use, and unscrew the filter stack every week or so to clean between the discs, where oils build up and go rancid. That build up is the usual cause of a press that suddenly makes everything taste stale. Grounds should go in the bin rather than the sink.
